I believe in collaboration over competition!

Where can you find an amazing must-go place in London?  If you have this question, I have an amazing suggestion,

 - Go to Scratch Secret Suppers!

Michelle and Jane, the organizers, know how to create   more than a food friendly event.

I had the pleasure to meet them in an event planned by Eventbrite for supper club organizers (great event, too). Lucky me! I was seated next to them.

I have just started to run my own new supper club in London, Melting Pot Supper Club, and I am trying to succeed.  I am very  impressed with the creativity and professionalism of Supper Clubs, Undergrounds Restaurants and Pop Ups. London explodes the creativity.

-But, what happens with the Scratch!?

The Scratch girls make great food, more than great, stunning! ten out of ten! The same quality that you can find in a fine restaurant. Great foodie experience. As a guest, you can feel a subtle energy that you normally don't notice in a restaurant. - I would like to know more about yours stories, girls!

The house is beautiful and "chic",I adore your natural elegance. - Oooh, such a precious napkins!  The kitchen is open and visible to guests and you can see them with a lovely pink apron preparing the dishes.

My friends and people in general are very impressed about the fact that another supper club invited me. This fact shows how friendly, kind and sure about their Supper club are the Scratch girls. I believe in collaboration over competition. I love people who open to share ideas, when the global dinamic is competitive and isolated, neither collaborative nor social. I say this because that's the impression many people still have, but, fortunately, not always is true.

My experience with my table mates was wonderful, how lovely and interesting  they were and make a big effort trying to understand my clumsy English.

Thank you Michelle and Jane for the invitation!

27th April ♥ Spring is in the air ♥ Melting Pot Supper Club London

I look out of my window and say "such a good day for feeling free and beauty"

My old shoes bring me out, along the streets like a homeless. The renewed season have a great power, suddenly, I feel alive and renovate.

I remember past Springs...

Child memories about ants, dragonflies, bees and varied insect wildlife. Climbing trees. New chlorophyll leaves and wild blossom in the air. Love and romance.

Someone can tell; what makes spring awesome or awful for romance?  not only do I think, that when you feel the first Spring breath, your heart is touched... the sun first rays open the love chakra and you get lost.

I breath in and out, and the inspiration came. I am going to do the planning for the Melting Pot Supper Club menu for the next event!! How exiting!!

Spring, la lala la lala lala
♫♫  ♫♫  ♫   ♫
In Spanish we say "la primavera la sangre altera" It means literary that the Spring makes your blood goes crazy (more or less), so I was wondering if there is any saying like this in English...

Thanks and have a happy Spring!

Beetroot Marinated Salmon, Brilliant shades of Orange, Pink and Green.

My favorite way of preparing salmon is the sweet and earthy beetroot cure whose dazzling shades of orange, pink and green seem more than appropriate for the festive table.
Similar to gravlax, this salmon is marinated in coarse sea salt, demerara sugar, white pepper, wodka, and zest from a bounty of citrus fruits overnight (orange, lime, lemon), fresh dill and grated beetroot. What results is a beautiful beetroot infused salmon.
A large piece of fish seems so extravagant, like a stunning jewel when presented. This dish is so incredibly good perfect for  dinner parties or entertaining food.
Oh, did I mention that it tastes absolutely phenomenal?

Serves 8-10

a side of salmon boned, about 800g
demerara sugar 100g
coarse sea salt 175g
black peppercorns 10g
vodka 4 tbsp
dill a large bunch, about 100g
lemons 2
finely grated orange, lime, lemon zest 2 tbsp
raw beetroot 600g

Check the salmon for any remaining bones, keeping an eye open for the tiny. These can be removed with tweezers. Lay the salmon skin-side down on a stainless steel enamel tin or glass dish.
Put the demerara sugar and salt in a mixing bowl. Roughly grind the peppercorns and add the sugar and the vodka. Roughly chop the dill and its stems, and add to the marinade. Finely grate the lemon, orange and lime zest and add to the sugar mixture. Peel and grate the beetroots, then stir into the other ingredients.
Spread the mixture over the fish and rub in well with your hands. Wrap a piece of clingfilm over the fish and place a heavy weight on top. (A small chopping board with a few cans on top will work.) Refrigerate between 24 hours and 2 days.
Pour off and discard any liquid that has seeped from the marinade. Remove the cling film and scrape away the marinade.
Slice the fish thinly and… enjoy!
